How Grasse Built Modern Perfumery

If you walked into Grasse in 1530, the first thing you would notice was the smell. The town was a centre of leather production, and tanning in the sixteenth century was a long process involving successive vats of urine, lime, fermented bran, and animal droppings. The stench hung in the streets for blocks, and the tanners had learned to live with it long before visitors stopped complaining about it.

Scented gloves came out of this. A pair of leather gloves perfumed with neroli or violet or musk masked the smell of cured hide, and a tanner who could make a glove that smelled of something else could charge more for it. Within a generation the scented glove had become a fashion item across southern France, then a luxury good across Europe.

From hides to flowers

When Catherine de' Medici married Henri II of France in 1533, she brought her household with her, including her personal perfumer. He set up shop on the Pont au Change in Paris and began producing scented gloves for the French court. The gloves carried social weight at court, and Grasse had a head start producing them.

By the mid-seventeenth century a scented glove from Grasse cost more than the leather it was made from. The flowers were carrying the value, not the hide. Tanning contracted as cheaper leather from elsewhere undercut Grasse, while demand for the scented gloves rose. The vats and lime pits closed in stages over the next several decades. The fields filled with jasmine, rose, tuberose, and lavender.

Most fragrance writing skips this part. The lineage version says Grasse has always been Grasse, the cradle of perfumery since some long-distant antiquity. The real story is that Grasse was a tanning town that smelled bad and stumbled into perfumery by trying to mask its own stench.

The materials that made the modern industry

The geography then mattered. Grasse sits at moderate altitude in a sheltered valley, far enough inland to avoid the salt air from the Mediterranean but close enough to it that winters stay mild. The microclimate that had been unremarkable for tanning suited the four flowers that would form the core of French perfumery for the next three centuries.

The houses that built around these materials are familiar. Galimard, founded in 1747, is the oldest of the surviving Grasse houses and still operates. Molinard followed in 1849, Fragonard in 1926. Outside Grasse, every major French house from Guerlain to Chanel sourced their naturals from these fields, and the modern industry's biggest names (Givaudan, Robertet, Mane, IFF, Firmenich) all maintain serious operations in or around the town. The result is that most of the perfume world's reference points have a Grasse fingerprint somewhere in them.

The Grasse jasmine harvest still commands a premium price internationally, though the town produces only a small fraction of world volume now. The reputation outlasted the production. A fragrance house can legitimately put "Grasse jasmine" on a bottle today, and that phrase functions in the consumer's mind as a guarantee of quality, even though most jasmine absolute in commercial perfumery now comes from Egypt and India.

How recent the categories are

The fragrance industry tells the lineage version of Grasse for a reason. The categories most people treat as old aren't, and the industry is happier when they sound old. Michael Edwards, an Australian fragrance consultant, formalised the five-family classification (fresh, floral, oriental, woody, fougère) in 1983. Before that there wasn't a stable consumer classification. Fragrances were sorted by intended wearer or by brand. The "fresh aquatic" subcategory came even later. It depends on a single synthetic molecule, calone, which Pfizer patented in 1966 and which didn't enter mainstream fragrance until Cool Water in 1988.

A category tells you which counter the fragrance sits on. It doesn't tell you whether you'll wear it. Two fragrances inside the same family can behave nothing alike on skin, and two from different families can read almost identically.
